Icebox Sandwiches

I got this recipe from my recipe addicted sharing friend awhile back.
I honestly haven't made them in a while.  However, with this heat, I couldn't pass them up.

Icebox Sandwiches.

Use any instant pudding you like.

Mix with milk.

Let it set while you clean up!

Fold in whip cream.  I made chocolate and vanilla.  At this point you can add mini chocolate chips, crushed heath bars, etc. The options are limitless.  Ours are the plain Jane version.

Then add 2-3 tablespoons pudding mixture onto one half of a graham cracker.

Top it with other half and wrap.

The wrapping is the hardest part.  It gets messy.

You may need to tape them closed.  Place in freezer.  Ours just happened to fit in the icebox.

Freeze a few hours until firm.  Overnight is the best. 


Ice Box Sandwiches

1 3.4 oz pkg instant pudding
2 c. cold milk
2 c. whipped cream
1 c. mini chocolate chips, or other add-in
48 graham cracker squares

Mix Pudding.  Chill until set.  Fold in whipped cream and chocolate chips.  Construct the sandwich however you see fit.  Either laying 24 graham cracker squares out and topping them with 2-3 TBL pudding mixture and other cracker, or doing then individually on seran wrap.  Enjoy!

I gave you this recipe but I'm not addicted to recipes. I can quit collecting them whenever I want. I don't have a problem. ;-)
